Roasted Veggie Fajitas

  • These roasted veggie fajitas are smoky, colorful, and satisfying enough to make you forget the meat ever existed.

Without fail, every time we eat Mexican out at a restaurant, my mom orders fajitas for two. Then she takes half home to enjoy the next day. Fajitas are one of those recipes that you can make a lot of at once, stash the leftovers in the fridge, and they’ll still taste just as good reheated.

It’s also one of those dishes you can stretch with rice or beans, so if an extra guest drops in, you’re covered. They’re versatile, colorful, and forgiving—you can throw in whatever veggies you’ve got on hand. They’re perfect with or without meat, and honestly, any protein works: chicken, steak, shrimp, or even ground turkey. As long as you’ve got veggies, cheese, and tortillas—you’ve got dinner.
