- A quick and colorful Mongolian-style veggie stir-fry that’s easy on the wallet but big on flavor
The best thing about stir fry is that it’s quick. You start your rice, you chop your veg and toss it in the skillet or wok, and you make your sauce while it sautés. When I lived in the Greenville, SC Metro area, Chinese delivery was a regular occurrence. However, where I live now in rural Alabama, delivery is non-existent. We can’t even get a basic pizza delivered.
My go-to’s were always Mongolian Chicken, Garlic Chicken, and if I was feeling froggy, Lo Mein. I can’t do without my Chinese food, so I learned how to make all of them.
This is my take on Mongolian Chicken. My favorite part of the recipe is the veggies, and I often make it without the chicken. So this is my take on Mongolian stir fry—veggie style. I hope you like it as much as I do.
