Ginger Beef & Veggie Skillet

  • A hearty, budget-friendly skillet packed with crispy potatoes, savory beef, and fresh vegetables in a bold ginger-lime sauce.

This recipe is what I like to call a “Frankenstein”—a little bit of this, a little bit of that, born out of an abundance of ingredients and a strong refusal to waste food. I hate watching produce go bad. It feels like watching money slowly disappear right in front of me.

We do compost anything that slips by during a busy week, but let’s be honest—I’d much rather see that food enjoyed at the table.

So before our zucchini, green beans, bell peppers, and potatoes had a chance to go to waste, this skillet came together. And honestly? It turned out so good it earned a spot in this week’s rotation.

This recipe is flexible, budget-friendly, and easy to adapt. You can swap the ground beef for pork, turkey, or chicken—or skip the meat entirely and let the crispy potatoes and veggies shine. It’s naturally dairy-free and can easily be made vegan with tofu or tempeh (just swap out the honey).

Equipment

  • Large skillet or sauté pan

  • Cutting board

  • Knife

  • Wooden spoon or spatula

  • Small bowl (for sauce)

Ingredients

  • Main

  • 1 lb ground beef

  • 2 medium potatoes, diced small

  • 1 yellow onion, sliced

  • 3 cloves garlic, minced

  • 1 tsp fresh ginger, minced (or 1/4 tsp ground)

  • 1 zucchini, diced

  • 1 green bell pepper, sliced

  • 1 cup green beans or sugar snap peas

  • 1 carrot, thinly sliced

  • 2 green onions, sliced

  • Handful fresh parsley or cilantro

  • Sauce

  • 2 tbsp soy sauce

  • 1 tsp sugar or honey

  • Juice of ½ lime

  • Chili flakes (optional, to taste)

  • 1 tsp cornstarch (optional, for thickening)

  • 2–3 tbsp water (if using cornstarch)

Instructions

1

Brown your beef

Heat a large skillet over medium-high heat. Add ground beef and cook until browned. Drain excess fat if needed, then remove beef from the pan and set aside.
2

Cook your potatoes

In the same pan, add a bit of oil and diced potatoes. Cook undisturbed for a few minutes at a time, stirring occasionally, until golden brown and crispy on the outside and tender inside. Remove and set aside if needed.
3

Build the flavor base

Add onion to the pan and cook for 2–3 minutes until softened. Stir in garlic and ginger and cook until fragrant (about 30 seconds).
4

Add your veg

Toss in carrot, zucchini, bell pepper, and green beans. Cook for 4–6 minutes, stirring occasionally, until vegetables are tender-crisp.
5

Combine

Return beef and potatoes to the pan.
6

Add your sauce

In a small bowl, mix soy sauce, sugar, lime juice, chili flakes, and cornstarch (if using) with a splash of water. Pour into the skillet and stir well.
7

Finish

Cook for 2–3 minutes until the sauce thickens and coats everything. Remove from heat and top with green onions and fresh herbs.

Notes

Stretch it to feed more people by serving over rice or noodles (I just recommend you double the sauce). Ground Turkey also works great in this recipe! This recipe is versitile. Just use whatever you have (cabbage, celery, mushrooms, frozen veg, etc.) A splash of sesame oil at the end gives this incredible flavor.
