Back in 2002, Wendy’s introduced their Mandarin Chicken Salad, and let me tell you—it was the order. If I was getting fast food, that salad was non-negotiable.

Then in 2010… they discontinued it. Tragic.

Every now and then, I still get the urge to pull up to Wendy’s and get that sweet, citrusy, crunchy fix—only to remember it’s gone. And honestly? That kind of disappointment builds character. Or at least it builds determination.

So I did what any cook in my position would do—I made my own version.

And I’m not even going to pretend to be humble about it… it slaps. Hard.

It’s everything I loved about that original salad, but fresher, brighter, and with a little bit of my own spin. The sweetness from the mandarin oranges balances perfectly with the tangy vinegar in the dressing, while the sesame and soy bring in that rich, savory depth. And the crunch from the chow mein noodles? Elite. Truly.

To round it out, I paired it with garlic sesame soy glazed chicken wings—sticky, savory, and packed with flavor. Together, it hits that perfect balance of fresh and indulgent.

This one has definitely earned a spot in our regular rotation, and I hope it becomes a favorite in your kitchen too.

Equipment

  • Large mixing bowl

  • Small bowl or jar (for dressing)

  • Whisk or fork

  • Knife

  • Cutting board

  • Baking sheet

  • Wire rack (optional, for crispier wings)

  • Small saucepan

Ingredients

  • Chicken Wings

  • 2 lbs chicken wings (flats and drums)

  • 1 tbsp baking powder

  • 1 tsp salt

  • ½ tsp black pepper

  • Garlic Sesame Soy Glaze

  • ¼ cup soy sauce

  • 3 tbsp honey or brown sugar

  • 1 tbsp rice vinegar (or apple cider vinegar)

  • 1 tbsp sesame oil

  • 5–6 cloves garlic, minced

  • 1 tsp fresh grated ginger (optional)

  • 1–2 tsp cornstarch + 2 tbsp water

  • Mandarin Crunch Salad

  • 1 head green leaf lettuce, chopped

  • 1 cup purple cabbage, thinly sliced

  • 3 green onions, bias cut

  • ¼ cup fresh cilantro, chopped

  • 1 (11 oz) can mandarin oranges, drained (reserve juice)

  • ½–1 cup chow mein noodles or sunflower seeds (optional crunch — skip almonds)

  • Sesame Mandarin Dressing

  • ¼ cup reserved mandarin juice

  • 2 tbsp rice vinegar (or apple cider vinegar)

  • 1–2 tbsp honey

  • 1 clove garlic, minced

  • ¼ cup olive oil

  • 1 tsp sesame oil

  • 1–2 tbsp soy sauce

  • 1 tsp fresh grated ginger

Instructions

Prep the Wings

Preheat oven to 425°F. Pat wings very dry with paper towels. Toss with baking powder, salt, and pepper.

Bake the Wings

Place wings on a rack over a baking sheet (or directly on the sheet). Bake for 40–45 minutes, flipping halfway, until crispy and golden.

Make the Glaze

In a saucepan over medium heat, combine soy sauce, honey, vinegar, sesame oil, garlic, and ginger. Simmer for 2–3 minutes. Stir in cornstarch slurry and cook until thick and glossy.

Glaze the Wings

Toss or brush wings with glaze. (Optional) Return to oven for 5 minutes to caramelize.

Prepare the Salad

In a large bowl, combine lettuce, cabbage, green onions, and cilantro. Add mandarin oranges.

Make the Dressing

Whisk together mandarin juice, vinegar, honey, garlic, olive oil, sesame oil, soy sauce, and ginger.

Toss & Finish

Toss salad with dressing just before serving. Top with chow mein noodles or seeds for crunch.

Serve

Plate wings alongside salad and serve immediately.

Notes

If you don't have a rack, you can flip the wings halfway through. Vegan? Add tofu or edamame to the salad and substitute the honey. If you prefer spicy, add some chili flakes or chili crisp in the glaze. In a hurry? substitute rotisserie chicken for the wings and make it a dinner salad. Almonds can be substituted for the chow mein noodles for a healthier option, unless you are allergic like me!
