I adore chicken pot pie. It’s easy to make and full of simple, familiar flavors that just work together. It’s classic comfort food at its best. But, confession time, I don’t like making the crust.
For those of you who don’t know me personally, I have severe autoimmune disease, I work with two nonprofits, take care of my mom who has a brain tumor, and share a home with three amazing dogs, one cat, and a husband who somehow tolerates the chaos. Our house is like an insane carnival most days.
As a career woman with a calendar that’s always bursting at the seams, I don’t have hours to fuss over a perfect crust. The filling? Easy to make from scratch. But I’ve learned that using pre-made pastry items cuts the time in half and tastes just as good.
I’ve found two ways to make chicken pot pie easy, fun, and most importantly…FAST.
🥧 Option 1: The Popover
It bakes like pot pie but eats like a Pop-Tart. These golden, flaky pockets taste like a warm hug in pastry form. Filled with tender veggies and a creamy homemade sauce, they’re a fun twist on a family favorite. It’s perfect for busy weeknights or picky eaters. I use store-bought crust for quick assembly, and one chicken breast easily stretches to feed the whole family. Familiar, comforting, and secretly packed with vegetables.
🍞 Option 2: The Biscuit Bomb
This one’s my go-to when I don’t have the time or energy for a full grocery trip. I just swing by the local general store for premade biscuits, whip up the filling, stuff the biscuits, and pop them in a preheated oven. Dinner’s done—no rolling pins, no stress, just smiles.
Instead of wrangling pie crust, I can focus on wrangling my household. And that, friends, is a victory worth celebrating.
